The hand-picked bunches are de-stemmed, crushed, and softly pressed. Fermentation takes place in stainless steel tanks with temperature control and selected yeasts.
Maturation
At the producer 5-6 months in stainless steel tanks. At least one month of bottle aging.
Duration
2-3 years (although it is preferable to consume it in the first year).
Visual aspect
Straw yellow with greenish reflections.
Olfactory aspect
Intense and full with aromas of yellow fruit such as peach, and even sage. Typical mineral note.
Taste aspect
Persistent and full with a marked savory note.

Mainly dishes based on fish and shellfish, even raw.

The historical label
The label is part of an old print by Diano Marina and Diano Castello dating back to 1850, which was chosen to demonstrate Vermentino’s strong bond with the territory; in particular with the Municipality of Diano Castello, where, even today, a much-felt competition for the best Vermentino is celebrated every year.
