Vinification
The hand-picked bunches are de-stemmed and crushed. The must is fermented in contact with the skins, the maceration lasts several days compared to the “Bormano”, during which manual pumping and punching are used.
Maturation
About 12 months in French oak barrels and 6 months in steel.
Duration
More than 10 years.
Visual aspect
Intense garnet red.
Olfactory aspect
Notes of cherry and berry jam. An intense smell of licorice and tobacco, with a subtle hint of vanilla.
Taste aspect
Complete, with a marked roundness and structure. Tannins present and with the capacity to evolve. The toasted note and licorice are particularly marked, accompanied, and balanced by the taste of red fruits.
The man on the label is Agostino Bianchi, an ancestor of our family. A unique and multifaceted man: he was inspector of the woods and forests under Napoleon and wrote the first treatise on the oil fly. A special label for an out-of-the-ordinary wine, which is produced only in exceptional vintages.
