Vinification

The hand-picked bunches are de-stemmed and crushed. The must is fermented in contact with the skins, the maceration lasts several days, during which manual pumping over and punching down are used.

Maturation

About 6 months in steel.

Duration

5 years.

Visual aspect

Intense garnet red.

Olfactory aspect

Intense aromas of black fruit, plum, and blackberry with spicy notes of pepper.

Taste aspect

Balanced, fresh, and round, with intense and slightly spicy fruity scents.

Pairings

Dishes are based on red meat and intense cheeses.

The historical label

The name Bormano finds its explanation in the toponym Lucus Bormani which echoes on the Ligurian territory in the pre-Romanesque era. Lusus means sacred clearing, and Borman was the Celtic deity of the woods and warm spring waters.
